There is a plainer way to understand the Tonlé Sap than any temple relief: a piece of salted fish, a bowl of rice, a wedge of cold melon. Trey ngeat is simply fish split, salted and dried in the sun — the lake's oldest preserving trick, older than prahok and just as essential, because a lake that floods once a year has to be eaten for twelve months. In the recovery years after 1979, when the markets of Cambodia were being rebuilt stall by stall and a whole country was learning to feed itself again, dried fish was often what there was. It kept without refrigeration, it travelled, and it stretched a little rice into a meal. People remember those years by their hunger; they also remember them by this exact plate.
That the dish endured — and is now cooked for pleasure, not necessity — says something honest about how Khmer food survived. The technique could not be simpler: soak if salty, fry till it crackles, break it up, and let cold watermelon do the rest. The genius is the pairing. Salt and crunch against sweet and cold is a contrast most cuisines never think to make, and once you have eaten it in the heat of a Cambodian afternoon you understand why nobody here would think to improve it.

Step 1: Judge the salt
Trey ngeat ranges from lightly cured to fiercely salty. If yours is a hard dry piece, soak it in cool water for ten to fifteen minutes and pat it dry before frying — this pulls back the salt to where it flatters the fish rather than punishing you.
Step 2: Fry until it crackles
Heat the oil over medium and lay the fish in skin-side down. Fry patiently, four or five minutes a side, until it is deep gold and audibly crisp at the edges. Dried fish scorches fast, so keep the heat honest and turn once. Drain on paper.
Step 3: Break and plate
Tear or break the fried fish into rough pieces along the grain — a whole slab is unfriendly to share, and the ragged edges are the best part. Pile it beside the rice with the spring onions scattered over.
Step 4: Serve with cold melon
Put the chilled watermelon on the table and eat in alternating bites: a forkful of salty fish and rice, then a mouthful of cold sweet melon. The contrast is the dish. Nothing here needs a sauce.

Why watermelon with salted fish?
It sounds strange and tastes inevitable — the sweet cold fruit resets the palate against the salt-heavy fish the way a good pickle would, but with the added mercy of being cooling in the hot season. It is a poor-season meal that grew into a beloved one.
What if the fish is too salty even after soaking?
Soak longer, or serve smaller pieces and more rice and melon around them — trey ngeat is meant to be a seasoning as much as a centrepiece. A little goes a long way, and a very salty piece simply means you use less of it per bite.
Can I bake or air-fry it instead?
Yes. A hot oven or air fryer will crisp it with less oil, though you lose a little of the shallow-fried richness. Watch it closely — dried fish goes from crisp to burnt in under a minute.
