Every cuisine has a secret that isn’t secret at all — just quietly taken for granted. In Cambodia it is this: pound a proper kroeung, keep good prahok and tuk trey, caramelize palm sugar with a steady hand, and a hundred dishes open up beneath you. We teach those foundations first, and we never assume you skipped them.
