The French protectorate turned Kampot into a working port — its riverfront lined with shophouses whose shutters still peel picturesquely today — and a port town eats what the boats bring in. Sngor chruok samut is the coast's answer to the great inland sour soups: where the lake makes samlor machu from mud fish and prahok, the Gulf builds a clear, sharp broth around prawns, squid, and sea fish, soured with tamarind and loud with lemongrass. It is a hot-country soup, meant for the rainy months when the air is thick and a sour, aromatic broth does more to revive you than anything rich ever could. Every coastal family sours it a little differently, and every one insists theirs is correct.
The craft is all in restraint and sequence. Steep the aromatics gently so the broth stays clear and perfumed rather than boiled to muddiness; balance the tamarind, fish sauce, and palm sugar until the soup reads sharply sour with only a shadow of sweet; and above all, add the seafood at the very end, in order of toughness — fish, then squid, then prawns — and kill the heat the second the prawns curl coral. A stem of green Kampot pepper dropped in whole scents the whole pot without turning it hot, and a last fistful of rice-paddy herb off the flame gives it the green, grassy nose of the coast. Serve it the moment it's done, over rice, and let the sourness do the reviving.
Add the seafood in order of toughness and pull the pot off the heat the moment the prawns curl. A sour soup dies the minute its seafood overcooks.

Step 1: Build a fragrant broth
Bring the stock to a simmer with the lemongrass, lime leaves, and galangal and let it steep ten minutes so the aromatics bloom. This clear, perfumed base is what separates a sour soup from a sour sauce; don't rush it to a boil.
Step 2: Balance the sour
Stir in the strained tamarind, fish sauce, and palm sugar, then taste. It should land sour first, then salty, with sweetness only as a shadow — sharp enough to wake you up, which on the hot coast is the entire point.
Step 3: Add the tomatoes and pepper
Drop in the tomato wedges and the green pepper stem and simmer three minutes until the tomatoes soften and bleed a little colour into the broth. The whole peppercorns perfume the pot without turning it hot.
Step 4: Cook the seafood last and quickly
Add the fish first and cook one minute, then the squid and prawns, and pull the pot off the heat the instant the prawns curl and turn coral — under two minutes. Stir in the herbs off the heat and serve at once over rice.

How is this different from the lake's sour soups?
The inland samlor machu are built on freshwater fish and prahok; the coast trades those for prawns, squid, and sea fish and a cleaner, brighter broth. Green Kampot pepper and heaps of rice-paddy herb give it a perfume you only get near the Gulf.
What gives the sour — tamarind or lime?
Tamarind is the backbone here, for a rounder, deeper sour that stands up to seafood; a squeeze of lime at the table sharpens it further. Some coastal cooks add unripe mango or a few kaffir-lime segments in season. Sour it to your own face.
Can I make it ahead?
Make the broth ahead, absolutely — it only improves overnight. But cook the seafood only when you're ready to eat, reheating the broth to a simmer and dropping the fish and prawns in fresh. Seafood reheated in soup is seafood punished twice.
